Going on a Cruise to Cabo San Lucas. What shore excursions are best?

My Husband and I are going on the 9 day trip on Carnival going to Cabo, La Paz, Mazatlan, and Puerto Vallarta. He is in a wheelchair. He is able to use crutches for short distances. Which shore excursions are best?
