You could mix the caramel topping into the pudding , use less 1/2 & 1/2 than the recipe calls for this makes a stiffer pudding cooked or instant, then either fold in some whipped topping and 1/2 cup of PS, and use this as your filling you can make a caramel with sugar, browning it, adding the butter and cream but you have the topping, use some of the topping as the liquid in the pudding, say 1 cup.
